Jollof Rice Recipe

500G LONG GRAIN RICE

  • 50g EkoFusion West African Red Stew Base Mix

  • 2TBS Tomato Puree

  • 50ml Cooling Oil

  • 2 Bay Leaves

  • Seasoning

  • Salt to Taste

  • 700 ml Stock/Water


1 KG of Rice

  • 100g EkoFusion West African Red Stew Base Mix

  • 50g Tomato Puree

  • 100ml Cooling Oil

  • 2 Bay Leaves

  • Seasoning

  • Salt to Taste

  • 700 ml Stock/Water



  1. Wash Rice and place in a pot

  2. Add Eko Fusion Base Mix and stir into the rice.

  3. Add tomato purée and stir in

  4. Add oil and mix

  5. Add salt and seasoning (maggi, knor, garlic, thyme, curry etc). Adding chilli if required.

  6. Add stock/water

  7. Cook on medium heat (gas mark 3 to 4) for 20mins

  8. Stir/Mix, making sure that rice does not stick to the bottom of the pan 9. Cook for another 10mins on gas mark 3.
